Penelope Bourbon Architects of Golf Hole 2

Penelope Bourbon Architects of Golf Hole 2

Some whiskey releases are designed to tell a larger story.

Penelope's Limited Series, Architects of Golf, came together over a love and discussion about golf.  It seems simple enough, but if you know anything about the spirits game, you know nothing happens overnight.

This is Penelope Architects of Golf Hole 2, a six-year-old straight bourbon whiskey with a mash bill consisting of corn (60%), rye (36%), and malted barley (4%).  The elevated rye content promises a more assertive profile while the finishing introduces a layer of complexity that we appreciate.

While many limited releases arrive with a one-and-done approach, Architects of Golf appears to be building something much larger. With Holes 1, 2, and 3 already announced, the series invites an obvious question:  How many holes are left to play?

While no official roadmap has been released, the golf-inspired theme naturally leads enthusiasts to wonder whether the collection could eventually stretch to nine releases—or perhaps even a full eighteen-hole journey. If that proves true, whiskey collectors and golf fans alike may be witnessing the early stages of a truly unique long-term bourbon project.

For now, our attention turns to Hole 2.

Non-chill filtered and finished with American oak staves, Hole 2 seeks to add depth without overwhelming the whiskey's foundation.  At 94 proof, it lands in a sweet spot that allows the flavors to fully express themselves while remaining immdiately approachable and not too hot.  While there's a segment of whiskey lovers that love a hazmat bomb, most would appreciate this mid-proof pleaser.

The whiskey settles into the glass with a rich caramelized sugar hue. It's an inviting color that hints at both sweetness and maturity before the first swirl.  The nose opens with notes of vanilla extract and toasted marshmallow, creating an immediate sense of warmth and familiarity.  As the whiskey breathes, deeper notes begin to emerge. Cedar adds a subtle layer of dry wood character that balances the sweeter elements beautifully. The overall presentation feels polished and mature without becoming overly oak-driven.

Hole 2 quickly reminds us why rye-forward bourbons continue to attract such a loyal following.  The palate unfolds with an impressive collection of baking spices supported by savory grilling spice notes that create both depth and texture. Layers of dark cocoa and butterscotch pudding contribute richness and sweetness without becoming heavy or overly decadent.  As the sip develops, tobacco notes emerge and intertwine with vanilla, creating a profile that feels remarkably complete from front to back.

This is not a bourbon that relies on a single dominant note. Instead, it continuously reveals new layers as it moves across the palate.  If you have an opportunity to snag an Architect of Golf bottle, we would love to hear your thoughts.
