About an hour west of Chicago sits DeKalb, Illinois, a community of 44,000 people that is made up predominantly of farmers and farm-related industry workers.  You'll find family-owned restaurants, Northern Illinois University and Whiskey Acres Distilling Company.  

Fifth generation farmers in Illinois are creating whiskey that are all very unique and as smooth as silk.  We can sum this up in two words…  DAMN GOOD! 

These farmers and distillers have created not only some of the best distilled spirits in the Midwest, but also the country.  You’ll find a visitors’ center that is a destination location, and it sits among the fields of grains that they use in their products. This is a tue "seed to spirit" operation and we love everything about this story.

Is at least FIVE years old and has a Mash bill of 75% corn, 15% soft red winter wheat, 10% malted barley.  Pale chestnut in color with fresh caramel corn on the nose with vanilla bean and toasted ciabatta bread.  This bourbon immediately coats the mouth and feels luscious throughout the tasting experience.   With flavors of Homemade caramel candy, roasted sweet corn and island fruits intermingle to bring a solid and memorable marriage of flavors.  Red fruits find their way in here and they are the precursor to and a controlled, spicy finish.

Whiskey Acres Bottled in Bond Rye Whiskey

Is like no other Rye whiskey we have tasted in the past year or so.   It’s aged is at least FOUR years old, and the mash bill is 75% rye and 25% corn.  Similar in color to its cousin, the Bottled in Bond Bourbon, but a much has a much sweeter nose and it’s nearly a butterscotch bomb!   We’ve only ever noticed this much butterscotch on one whiskey in our life, and that was a double oaked bourbon.  This was a HUGE surprise for us.  Brown sugar, creamy nougat, vanilla pudding on the palate.  This one is and it is incredibly smooth and it ends with cinnamon, nutmeg, allspice and just a whisper of fennel seeds.  If you’re looking for peppery rye, this isn’t it.  But this bottle is absolutely stunning and unique in its own way.
